Why is Tuscan bread made without salt?

The reason Tuscan bread is unsalted is originally because of taxes. Because salt was taxed so heavily in the 12th century, everyday people learned to make bread without it. Even today, you'll notice that bread in Florence is rarely salted.

Pylsa

What is Pylsa?

One of Iceland’s most beloved food is the hot dog. But this is where a “hot dog is not just a hot dog”. The Icelandic pylsa are made mostly from lamb, with some pork and beef, and are traditionally topped with raw onions, crispy fried onions, ketchup, sweet brown mustard (pylsusinnep), and a remoulade - a special sauce which is made with capers, mayo, mustard and local seasoning. A pylsa defines the saying “the sum adds up to [a whole lot] more [yummy] than its parts”! Load it up like the locals!

Geothermally baked bread

Geothermally baked bread

In Iceland, bread is mixed, wrapped up and dug into the warm ground. The heat and steam from Iceland’s hot springs bake this fudgy-textured, slightly sweet, rye bread, which is then dug up after 24 hours, and ready to eat. A delicious treat, it is often served with butter or smoked trout.

What Makes Japan’s Uni so distinctly delicious?

What Makes Japan’s Uni so distinctly delicious?

Japan’s uni (sea urchin) owes its rich, complex flavor to the local kombu (kelp) it feeds on. Just as terroir influences the character of wine or cheese, the type of kombu and the environment in which it grows dramatically affect the taste of the uni. To experience a side-by-side uni tasting—is to experience a true culinary expression of place.
